Making Gir Cow Ghee With The Bilona Process –

1 liter of A2 Gir Cow Ghee takes 3 days to make. The A2 milk produced by Gir cows is boiled and set for curdling overnight. With the Vedic Wooden Bilona method, the curd is churned in both directions to make butter from the buttermilk. The butter is then put in a clay pot and heated to 115 °C at 5 a.m. during Brahma Muhurta. This makes A2 Gir Cow Ghee

Gir cows are native to the Indian state of Gujarat. They make between 7 and 9 litres of A2 milk every day. This makes gir cow A2 ghee more expensive than other ghee on the market. Their milk only has A2 protein, which is easier to digest and is better for your gut. It's also similar to what we humans get from our mothers. The A2 protein in gir cow milk does not cause any discomfort or lactose intolerance.

To reassure you that the ghee we send you doesn't contain any harmful chemicals, vegetable oil, or any other added components. Hand-churned from the milk of desi cows, using a wooden churner and boiled in mitti ki handi to retain its rich aroma and flavor.

Our ghee starts with the slow-cultured curd of A2 milk, made by boiling and cooling the fresh milk overnight.

Using the traditional Bilona method, we hand-churn the curd to produce rich and flavorful fermented butter.

After churning the fermented butter, the buttermilk is separated and the butter is heated slowly to make cultured ghee.

Our ghee is made using the traditional Bilona method which involves churning butter out of curd, then boiling it to extract pure ghee. This process retains all the natural nutrients and flavors, making it healthier and tastier than store-bought ghee which is made using machines and chemicals. Additionally, we have a strict no-needle policy, and our ghee is lab-tested for heavy metals.

A2 cow ghee is highly digestible and offers a range of health benefits. One notable advantage is its high smoke point, reaching approximately 450°F, which surpasses that of most vegetable oils and butter. This means that when cooking at high temperatures, A2 ghee maintains its nutritional properties and does not release harmful fumes.

A2 ghee, made from the milk of Desi cows, is often considered preferable to regular ghee. It offers a richer taste, enhanced health benefits, and improved digestion. With a thicker consistency and higher yield, A2 ghee is obtained by gently heating butter over a low flame.

Lactose and casein proteins are removed from the ghee during the process of making it as they sink to the bottom, so our ghee contains very little lactose and casein protein.

To check ghee purity, melt a teaspoon of ghee in a pan on medium heat. If it melts immediately and turns dark brownish, it's pure ghee.

We use pure Desi cow milk, specifically the Sahiwal breed, to make our ghee. We prioritise cow health over artificial injections.
